Checklist inside a task
I am a Project Manager and my daily is to assign tasks to other team members, developers and designers. I mainly use a bulleted list to my descriptions.
It would be extremely useful if I would add checklist, like Trello does, and when I check something it would move further down and probably with an inactive state.

Is there a way a colaborator can also check the boxes?

Collaborators are only allowed to view the description field, not edit it. Ticking the checkboxes entails editing the description, so they will not be able to do that. You can learn more about user permissions here: Rights by License Type.
One option I can think of is to ask Collaborators to leave a comment about completing a certain step @mentioning a team member who has the right to edit the description field. The @mentioned user can then tick the checkbox.
Alternatively, I'd suggest creating subtasks instead of checkboxes. Collaborators have permission to change the task statuses and mark the assignments as Completed. Other than that, you could upgrade the user's license type to an External or Regular user.
