It is possible to assign tasks to only the persons with whom i shared the project ?

Turning off inherited sharing should do that for you. It's a feature in Wrike Labs.

@Ruud, if you've assigned a person/group to a Project, then by default everything within the Project will be shared with them, this is Inherited sharing as default sharing setting in Wrike. Selective Sharing is an Enterprise labs feature which adds more control elements around permissions and sharing.
