I'd like to find out how many people have submitted my form.

Hi Jonathan! Do you have the Requests going to a specific Folder or do they have a specific detail that we could use to filter the Folder by? 

If not, I have a suggestion for a workaround, just so that you can start tracking how many requests you're getting. 

1. Add a Dropdown question to your form. 
2. Make the question required (so people will have to choose an option).
3. Make the questions and answers anything you want, you just need to have something.
4. Map the responses to a Custom Field.

Then you can filter for tasks with that Custom Field filled in.
