Show/hide Custom Fields in right pane?

In Table view, when clicking to open a Project/Task in the right-hand pane, how do I set which custom fields are shown/hidden in the pane? 

There are way more fields in the pane than on the Table, so it's not 1:1. It's also not every custom field in the space/account settings. Where should I be looking? They're not on the blueprint either, and the tasks/projects are not Custom Item Types. 

PS: Does the right-hand pane/view/pop-out have a formal name?

Laura Lysaght - You can customize the fields shown in the custom field view (I'm giving it that name), in the custom item type menu. 

Here you can add fields or unhide fields. 

Does that help find the rest of your custom fields?

No, because I'm not in a Custom Item Type. It's just a default "Project". 

The Project is made from a Blueprint and the custom fields are not in the blueprint.

Then it could be where the custom fields apply or where it's been added to. 

If you go to space settings -> custom fields:

See where the field has been added to. In the screenshot below the "# incoming RFQs" custom field has only been added to our Sales Weekly Updates Folder. I can only use it in that folder.

I'll also add Laura Lysaght  (to Mike Fank's super helpful responses!) - it sounds like you have a lot of custom field boxes in your account. I'm not sure if you're an admin or not - as an admin, I see more Custom Field boxes than my team (I even have a Project Coordinator Notes box that is set to only a few of us to be able to see) - similar to how Mike mentioned some Custom Fields only showing dependent on the Folder. 

I think this post might be helpful in explaining the Panel and Mode Switcher options - it's not exactly what you're asking but it's in the same vein and will explain a a bit more about the Panel experience overall.

Additionally, the Table View you're referencing is customizable - and isn't correlated to the Item View custom fields. There's a LOT you can do with Table Views and one of my favorites is the Grouping feature. I utilize the Columns (ie Custom Fields), Filtering and Grouping - it helps us really get the view to show the team the info they're looking for. This post from Wrike is more helpful than anything I could screenshot, ha, so I'd start there, I added one of the images below.
