Default Status for New Projects and Tasks
Current behavior chooses the first status listed under the Active category of Workflow. For us, our Marketing Team has made "New" a "Deferred" category item and would like to have new items use that. However, per the default behavior, that is not possible. Even if we set a rule to automatically change something like "Active" to "New", Active will be listed in the picklist of available statuses and we don't want that as an option.
Our request is that users would have the ability to set whichever workflow status they want as the default for new items.
Another very annoying behavior is that users are unable to move a status to another category. For example, if "On Hold" was set originally as an Active category, we would like to drag it to "Deferred". Instead, we had to create a wholly new status under Deferred and re-assign all the tasks using that old status to the new status.
Thank you for sharing your suggestion Mike Murray, I'll be passing it to our team shortly 👍

Second this one. We also have separate workflows for different groups, and while we can set a default workflow for a project, I haven't been able to make new items use the new workflow by default. I haven't even been able to set a rule to automatically change workflows that are added from an external pipeline. None of the automation techniques seem to work.
