I have several tasks on the left pane and don't want to have to scroll down through them all every time. How can I hide the completed tasks?

There is a little funnel icon on the upper left. Click that and it should look like
Uncheck both "Show completed projects" and the complete projects should be removed from the left-hand column.
The "List" view also has a similar option to only show active tasks.

Must I physically change the status from Green to Blue?
In my project templates, I add a checklist task for my self to go back and do all of the project post mortem stuff. (Anything I can do in one sitting/session I put in checklists.) I add "set project to complete" as one of the tasks. I make the post mortem dependant on the final task. (usually client approval). Then setting the project to complete is just part of the process.
I think my issue was clicking on the down area to show going from Green to Completed,,
