"Deferred" is not an option

Perhaps update the help section for Templates. "Deferred" is not an available status option for newer accounts (per your help topic on Tasks). It seems the new status would be On Hold.

Recommended Task Status Settings

Change the statuses of the template's tasks to deferred. Deferred tasks do not show up in the overdue section of To-Do emails or in the Dashboard widgets for overdue tasks.

For this idea using the term, Deferred isn’t the actual name of a status, but rather the name for a group of Statuses which mean that the task is postponed. However, you've given me food for thought and the information on that page will be reviewed so thanks for taking the time to post here 🙌
