Status options for projects

It's not exactly the same as projects, but I believe there are two ways.  I would love to hear more ideas.  

First, you can create a few folders like the following image.  Remember, a task can be in more than one folder.  So while it might be housed in a folder titled "Campaign" - it can also be housed in a folder called "On Hold" 

So, for example.  Here are two tasks I have, one is "on hold"

In my opinion, the best way to do this is with Custom Workflows.  Here is an few examples my team uses:

Hi Emmanuelle, Patrick is right (you're a rockstar Patrick!). You can't have Custom Statuses directly at the Project level, but Rob requested that feature. If you could +1 that request that would help our Product team know how many people are interested in the feature.
