Ability to change default sort for attributes

I would like to be able to change the default sort rules for attributes when creating table reports.  For example, our business owners would like to see a list of projects that are in execution sorted by Project Status (Red, Yellow and Green).

The issue is that for the Project Status attribute (and any other attribute), you can not change the default sort which is Green, Yellow and Red.

Thanks Anastasia!  This is helpful but we will have sorting requirements beyond A to Z and Z to A for a single attribute.  

For example, our executives are requesting a report that prioritizes by Red, Yellow and Green and within each color sort by Priority (High, Medium and Low).  So, not only do we want to have custom sorting for each attribute but we would also want to be able to define a primary, secondary etc sort.  This would be similar to sorting that is available in Excel or Google Sheets.

Also, we are trying to change the "default".  Our sponsors and stakeholders want to receive the report without having to sort it themselves.

So... how do you set the default sorting for a folder? I have the exact same want as David, and I don't see an answer here.
