What does the launch task custom field do? Is there a list of what all of the custom fields do?

In my opinion, you can use the custom Fields as you wish. If I look at my custom field list, I don't see the one you are mentionning. I'm on Wrike since a long time ago, I don't know if new accounts comes with predefined custom fields now. Maybe that custom field you are mentionning field was created from a previous coworker?

It looks like this can be a custom field created by someone on your team, because, as Eric says, custom fields are, well, custom, so it's possible to create any fields.
