how do I exclude weekends from the work week?
currently when setting tasks they are running through the weekends. I'd like to exclude weekends to only count Monday to Friday as work days.

This setting is under Account Management! I have attached a screenshot.
Click on "Edit workweek" to be able to change the workweek dates! I am one of the company account administrators, so I am not sure if this ability is specifically for admins or all users.

although the Task seem to run through the weekend, it actually doesn't - the duration is 6 days, because Wrike only counts the working days (Mon - Fri) that were set by the account Admin. If I wanted to take the weekend days into account, I'd check the "work on weekends" box. You can learn more about Work Schedules on our Help Center.
