Not Having to Use All Preset Categories When Creating Custom Workflows

When I go in to create a custom workflow, it would be great if Wrike didn't require me to put something in the Active and Completed preset categories. We have some projects that are more "back office" work - work that supports active tasks. Within those projects, we'd like all workflow elements to be in the "Deferred" status so that when you look at all Active tasks across projects, you're not pulling up those tasks. Can you make Custom Workflows more flexible? I'd like to be able to choose to put all within deferred. 

Also, I think a red color would be very useful for project management - right now there is the magenta option, but not red.
