When creating a new item in a specific workspace, we would like to define a default Custom Item Type instead of the generic "Task" type to be always pre selected. This would speed up creation and ensure consistency without having to manually switch types.

You can actually do this if I'm understanding you correctly. Below is a screenshot from our Wrike Management space. Whenever a new task is created it defaults to the CIT I made for this. You can see in the screenshots below that all I did was toggle off the other types when you click to choose the type. By having the WMT be the only option toggled on it automatically defaults to that type when you create it.
