How can you automate a requestor to be added as an assignee ?

You can do this via an automation rule! Trigger (new item created) --> then change assignee
If you would rather add an assignee and not change to you can do that too!
Is it possible to assign it to someone based on a custom field? For example, I have a custom field for "Producer" and when that field changes, I wanted it to update the Assignee.

It should be possible: you can use the "Custom field changes" as a trigger and "Change assignee" as a rule action:
