Best Way to Show Project Progress

Wrike has the progress % which is based on an AI calculation, however, if we look at many of our projects and their % progress and many times the color of the progress bar, it doesn't align to what is happening within the project. We have large programs running that will continue for a couple of months, with tasks to be added as we go along. The only value we can show business in terms of progress is the progress % which might be at 60% but we know for a fact that we're only at MVP2 and 20%.

Do you know in advance what king of tasks and how many you'd be adding as the projects progress? 
It's also interesting to understand how you estimate the actual progress (e.g. 20% instead of 60%).
