Conditional Due Date

We have regular reports that we typically promise in either 5-7 business days or 7-10 business days. It would great if Due Date either allowed for conditionally assigning a date based on form submission date OR, even better, adjustable settings to Due Dates to prevent users from selecting a date to soon.
