Hi everyone!
I've created a new project and used "calendar" as default view, but now I've changed my mind and I'd like to set "table" as default view, and delete the "calendar" view... I've scoured the contextual menus and the buttons, but couldn't find a way :/

Have you tried setting the desired view through the view options while you're in that particular project?
Click the view you want > click the 3 dots that appear > Click Set view as default
This should do the trick, and then you can delete/clear out the views you don't want to show by default as well :)

That's so weird! I tried Gantt chart and can see it on my side. I would definitely reach out to support via chat! Maybe something hasn't been enabled or you don't have the right access to do so? Are you an admin on the account/space in question?
Federico Fanton oh! I just tested that if you have a private view (with the lock icon), you won't get this option. I can't see in your screenshot if your Gantt chart has the lock? Aka is private.
If you add a new view and ensure that it is public, the option for setting as default should show up :) hope this helps!
