Does anyone know if you can edit the confirmation email that's sent to the requestor after they submit?

Hi Greta! This is actually something that our team is working on releasing for you guys. 🙌 We'll be updating Jamie's thread as new changes are released, so that would be a good place to follow for news and updates.
This is a feature now! In case anyone else ends up here still wondering. On the settings page to create and manage request forms, there is a link in the top right that says "Configure emails."
As of right now there's only a way to create one confirmation message for all forms with that enabled. But there's a feature request for that started too: https://help.wrike.com/hc/en-us/community/posts/360037818314-Multiple-Request-Form-Confirmation-Emails
