Yes, this would be most helpful to show custom fields in various areas: dashboard, board view, project level, etc. We use a custom field for customer name, project number, etc.
Agreed, not having a different subtask workflow is frustrating. For example, with a meeting minutes ticket using a basic workflow; the action items should have the standard workspace workflow.
Also, key tasks assigned to you in a define timeline (e.g. today, this week.) I agree that it's sparse and has room for better metrics, infographics, etc.
